Rip Esselstyn (son of Dr. Caldwell Esselstyn) has an engaging, dramatic writing style that keeps the reader interested even though this book is primarily about health and weight loss, including references to many scientific studies. (However, the actual notations for the studies are on his website, not in the book.)

Rip’s personal history as a professional triathlete and firefighter gives him lots of riveting stories to share along with the science. This is a program to enable someone to test drive a plant-based lifestyle to see what can happen in seven days. Many people who give this a try have been so amazed by the results in such a short period of time that they go on to continue this way of eating.

The seven chapters of Part 1 lay out the seven principles of the program:
1) Eat plants
2) Eat whole foods
3) Chew your calories
4) Avoid calorie-dense foods
5) Limit your protein
6) Limit your salt, sugar, and fat
7) Walk every day

After these chapters, the reader is introduced to the food and recipes for the seven days. There are helpful templates for breakfast bowls, salad bowls, flats (open-faced sandwiches), and supper bowls. The one-page recipe templates were the most helpful part of this section.

Batch cooking of grains, legumes, salad dressings, and veggies plus pre-chopping of veggies and fruit are recommended to decrease daily meal prep time. While specific recipes are also included, there are also several pages devoted to no-recipe meals.

While I have been on a healthy eating path for a long time, this book provided lots of new tips and tricks as well as enthusiasm for the journey.
